3 Spring Cocktails To Sip On This Weekend
Spring has only just begun unfolding but it is never too early to get into the spirit of the season. As our layers of clothing get lighter, so do our beverages. It is time to move away from warming drinks like mulled wine and spiced Irish coffee to cocktails that are bright and almost airy.

Strawberry & Balsamic Vinegar Twist
This cocktail is not so much as a twist as a match made in heaven. If you have never tasted the divine alchemy of strawberries bathed in balsamic vinegar, then this is the best introduction to what will be a lasting love story.
2 strawberries, quartered
60ml Tanqueray Gin
15ml Italian balsamic vinegar
15ml brown sugar syrup
¼ tsp egg white
Pinch of fresh thyme
Muddle the strawberries, gin and thyme until the mixture resembles a puree.
Add the balsamic vinegar, sugar syrup and egg white. The egg white gives the cocktail a textured, creamier finish.
Shake well and double strain into a cocktail glass.

Citrus sidles up to gingery spice to give this lip-puckering cocktail a feisty bite. Treat your palate to a bright burst of sunshine and the delicious warmth that comes with it.
45ml Hendricks gin
15ml Italian limoncello
30ml fresh lemon juice
15ml brown sugar syrup
¼ tsp egg white
1 slice of cucumber about 2 inches thick
3 thin slices of ginger, crushed
1 slice of cucumber for garnishing
Muddle up the cucumber and ginger. Then combine all ingredients in a shaker.
Shake well and double strain into a glass.
Garnish with a cucumber wheel.
Blood Orange Margarita
The exotic blood orange transforms an ordinary tequila cocktail into a delicacy with its beautiful crimson flesh and raspberry-like flavour.
45ml Jose Cuervo Gold Tequila
15 ml Cointreau
20ml fresh blood orange juice
15ml fresh lime juice
15 ml brown sugar syrup
1 slice of lime for garnishing
Combine all ingredients in a shaker and shake well.
Line half the rim of a margarita glass with salt.
Pour the cocktail into the glass and garnish with a lime wheel.
